  • ¾ cup (180 ml) neutral oil (canola or grapeseed)  
  • ¾ cup (150 g) granulated sugar  
  • ¾ tsp  almond extract  
  • 1 ½ tsp  vanilla extract  
  • 3 large egg whites  
  • 6 tbsp (90 g) sour cream  
  • 1 cup + 2 tbsp (135 g) all-purpose flour  
  • 1 ½ tsp  baking powder  
  • pinch of salt  
  • 6 tbsp  sprinkles  

For The Buttercream Frosting

  • ¾ cup (170 g) unsalted butter, softened  
  • 3 cups (360 g) powdered sugar  
  • 5 tbsp (75 ml) heavy cream 
  • 1 ½ tsp  vanilla extract  
  • 3 tbsp sprinkles, plus extra for decorating  

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a cupcake pan with liners or lightly grease it.
  2. Mix wet ingredients: In a large bowl, whisk together the oil, sugar, almond extract, and vanilla extract until well combined. Add the egg whites and sour cream, whisking until smooth.
  3. Prepare dry ingredients: In a separate bowl, sift together the flour, baking powder, and salt.
  4. Combine wet and dry ingredients: Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Be careful not to overmix.
  5. Add sprinkles: Gently fold in the sprinkles to distribute evenly throughout the batter.
