    2. Combine Dry Ingredients: Whisk flour, baking soda, salt, and cinnamon in a medium bowl.
    3. Cream Butter and Sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
    4. Add Eggs: Mix in eggs one at a time, ensuring each is fully incorporated.
    5. Stir in Almond Extract: Add almond extract and blend gently.
    6. Incorporate Dry Mixture: Gradually add the dry ingredients to the wet, mixing on low speed until just combined.
    7. Fold in Pecans and Dates: Stir in toasted pecans and chopped dates by hand.
    8. Chill Dough: If desired, cover and chill for 2 hours or overnight for chewier, thicker cookies.
    9. Scoop and Bake: Drop dough onto baking sheets, spacing about 2 inches apart. Bake for 8–11 minutes or until golden brown.
    10. Cool and Serve: Cool cookies on the sheet for 5 minutes, then transfer to a rack to fully cool.
